Purpose of position: 

The role of a wine steward involves all aspects of wine and beverage service and stock control. A good foundation and understanding of wine is required with an ambition and drive to develop and grow. The steward will provide a personalized wine and beverage service striving for the highest possible wine culture and unique guest experience. Ensure that all food, beverage and service minimum standards are met at all times, so that we deliver an uncompromised quality service to our guests at all times.

 Brief Description of position:

The Wine Steward is responsible for the following:

  • Attend menu-briefings with chefs and other service staff before every meal
  • Train and share information with all FOH staff to equip them with wine and beverage knowledge regularly and keep record of it.
  • Work with the chefs to ensure that meals are served timeously should there be a tasting menu planned for the day
  • Engaging guests in conversations about personal wine preferences, items on the food menu etc., resulting in wine recommendations, as opposed to mere order taking
  • Liaising with the Executive Chef with regards to menu items, in order to ensure the best possible wine pairing experience for guests and communicating suggestions to other relevant staff
  • Keep the wine cellar in immaculate appearance. Stocked, clean and orderly (and universally understandable for other staff members)
  • Oversee daily stock takes of bar and assist in managing beverages in the rooms
  • Assist with monthly stock takes and investigate discrepancies
  • Monitor temperatures and humidity of the wine cellar on a daily basis, to ensure ideal conditions for ageing and service
  • To keep abreast of wine industry innovations, trends, new suppliers and products

Minimum Requirements

  • Diploma in hospitality management or equivalent.
  • Certificate in Wine/ WSET Level 1/ CWA South African Wine Course/ Equivalent
  • 3 years’ experience working in a 5 star service environment
  • Sound Wine knowledge and understanding of the Wilderness Safaris Wine offering and culture
  • Stock management and counts (attention to detail required)
  • Driver’s license advantageous
  • Ability to work flexible hours
