Having grown up in Texas, founder Will Yates was literally teethed on a piece of beef jerky. When he moved back to the UK, he was unable find anything as healthy, wholesome and tasty as traditional Texan style jerky – so Billy franks was born...

What started off as an all consuming hobby in Will's home kitchen grew and grew, so much so that he left his job to make jerky full time. He moved production into a small unit above a brewery in Hackney Wick for a few years and then, after a successful crowdfunding campaign, we moved into a much larger space behind food mecca Maltby Street Market.

Passionate about provenance and quality, Billy Franks only uses the best British grass-fed beef and free range turkey to make the healthiest and tastiest jerky, if our Great Taste Awards and International Artisan Jerky Awards are anything to go by...

Its not just about what’s in our product but also what we leave out. We don’t use any colourings, preservatives or nitrates, because we know our unique production method is preservative enough. Not to mention we are low in sugar, salt and carbs leaving you with a healthy and wholesome meat snack.
